Spicy Zesty Guacamole

Most of you that know me know that I love avocados. I eat avocados in many different ways–I drink them in smoothie form, I put them in my eggs, sandwiches, burgers, salads, etc. I even use avocados as a hair and facial treatment. But one of my favorite ways to eat avocado is GUACAMOLE!! I have made guacamole many many times and it doesn’t always turn out exactly how I want it, however after many failed attempts I would like to say I have finally mastered the perfect guacamole recipe…at least my husband thinks so.

Spicy Zesty Guacamole

Ingredients

  • 3 Avocados
  • 1/2 Red Onion
  • 2 Jalapeños
  • 1/2 Lime
  • 1 Tsp Salt
  • 1 Tbsp Olive Oil

Instructions

Chop the red onion and the jalapeños into small pieces then add them to a bowl. I took the seeds out of one of the Jalapeños to make it a little less spicy. If you like it really spicy, keep all the seeds in.

Cut the avocados and add them to the bowl. An easy way to cut avocados is to cut them while they’re still in the skin.

Add the olive oil, salt, and juice from the lime. Really squeeze the lime for all it’s got – it’s ok if some of the pulp gets in. Mix and smash everything together. I usually smash the avocados with fork but of course you can use whatever works for you.

I added tomatoes to this recipe for a friend’s baby shower recently and it was a hit. I was asked for the recipe by several people so I finally wrote one. Enjoy!

Notes

The trick to good guacamole is picking out the perfect avocado. You want the avocado to make a little dent when you squeeze it. You don’t want it to feel real firm, you want it to feel a little soft, but not mushy.
